BACON, MUSHROOM, RED ONION AND PEA RISOTTO

I am a big fan of  a risotto, so here is the recipe for one I made the other day, it took me about 45 minutes to make.

ingredients

  • 3 rashes of back bacon (un-smoked)​
  • 3 mushrooms
  • 1 red onion
  • Frozen peas (as many as you want)
  • Vegetable stock cube
  • Risotto rice (use the amount it tells you on the packet)

equipment

  • Plastic spoon
  • Knife
  • Chopping board
  • Deep frying pan
  • Frying pan
  • Measuring jug
  • Kettle​

Method

  1. Start by measuring out your rice and then putting it in a pan, I use quite a deep frying pan, but use whatever you have available to you.
  2. Prepare the stock using the stock cube, following the instructions on the packet).
  3. Pour the stock onto the rice and bring to the boil.
  4. Keep stirring
  5. Chop the bacon into strips and fry in the other frying pan.
  6. Cut up the onion and throw it in with the bacon.
  7. Chop the mushrooms and throw them in with the bacon and onions.
  8. Once the bacon mushrooms and onion have cooked nicely put them in with the rice.
  9. Mix the risotto until most of the liquid has gone.
  10. Throw in all the peas and stir until the peas have cooked, if you need to add any more water do so now and continue to cook until the water has gone.
  11. Serve up and enjoy.
